The definitive guide
Build a fajita bar
A build-your-own fajita bar is the easiest, most fun way to feed a crowd: you cook the sizzling proteins and vegetables, then set out warm tortillas, sides, and a spread of toppings so everyone builds their own. Here is everything you need to plan it.
How a fajita bar works
Plan on about a third to a half pound of raw protein per guest, one to two bell peppers and half an onion per pound of meat, and 2–3 tortillas per person with extras warmed. Cook the proteins hot and fast in batches so nothing steams, char the peppers and onions, and keep everything warm while guests assemble. The magic of the bar is that most of it — sauces, pico, guacamole, beans, pickled onions — is made ahead, so the only live cooking is the sear.
