Bringing regional Mexican cooking to American kitchens
Rick Bayless opened Frontera Grill and Topolobampo in Chicago in the 1980s, at a time when most American diners equated "Mexican food" with combo-plate Tex-Mex. His restaurants and his PBS series, built around research trips through Mexico's regional cuisines, helped introduce home cooks to moles, regional salsas, and techniques well beyond the fajita platter and hard-shell taco.
A bridge between Tex-Mex and regional Mexican cooking
Bayless's public-facing teaching — cookbooks, television, and recipe writing — sits directly alongside the fajita's own story: a Tex-Mex dish that draws on Mexican ingredients and grilling technique.
