Why crowding ruins the char

Searing needs a hot, dry surface. Pile too much cold protein into a pan and its temperature plummets below the point where browning happens; the meat releases moisture, which pools and boils. You get steamed, gray strips instead of blistered, caramelized ones. The fix is simple: give the food room. Sear the protein in batches, set it aside, char the vegetables, then reunite everything at the end.
