The anatomy of a fajita blend
Every good fajita seasoning rests on chili powder and cumin. From there, paprika (smoked, if you want depth) adds color and roundness, garlic and onion powder build savoriness, and Mexican oregano brings a floral, slightly citrusy note that its Mediterranean cousin can’t. Salt, cayenne, dried-citrus brightness and a touch of sugar are the levers you actually taste-test. This builder keeps the backbone fixed and scales the rest to your sliders.
Mix everything well and store it airtight, away from light and heat, for up to six months. Use about 1 tablespoon per pound of protein.
